I think it would be cool if there was a mission you cant accept from the mission menu, but you take the mission from an npc you randomly encounter in a random sector. Thoughts?

It would be nice, like for example being able to take a mission to destroy the unrat dent for a faction in the system if you jump into the same sector as the dent.

That would be kinda cool, some kind of random encounter mission. You could have everything from NPC's trying to hire mercs and escorts. To someone asking for help hauling goods for them.

Like Skyrim ! I agree, maybe being asked by senior hive bots to do some work for them in return for access to a secret hive stations, being able to dock with a queen and equip with bot ships and weps and/or an amnesty from attack until you next attack another bot.

Imagine the fun you could have disguised as a regular Orun Collector in Dau waiting for a hapless newb to come along.
