Regarding returning to VO, perhaps having an oversized joystick, flat, so that you can steer using a foot? That leaves another foot free for a footpedal (acceleration control?) And a hand, for sme flight joystick maybe? I dunno honestly.

Looknohands had a pretty sweet pedal setup once upon a time...I imagine there are a lot of options for moving various functions to pedals, with the major limiting factor being training a previously non-dominant hand to perform fine motor control functions/coordinate with eye.
